I am sad to see the holidays go by so quickly but am welcoming spring with open arms! Okay, I may be jumping the gun here but I feel like the holidays equal winter. Then there is this in-between timing of not knowing if it’s still winter or if spring is right around the corner. Either way, I will gladly wear scarfs as long as I can since Las Vegas summer weather is not always the most enjoyable. Valentine’s day, however, IS around the corner. This color frosting is perfect for cupcakes to give to that special someone.
I am a sucker for tart flavors. Raspberry being on the top of that list. You can easily make these with either raspberry preserves or fresh raspberries. As you will see from the recipe, I decided to use raspberry preserves. I also do not add the typical amount of powdered sugar since I do not want it to overtake the raspberry flavoring. The white chocolate is just that extra touch!
