White Chocolate & Raspberry Vanilla Cupcakes

I am sad to see the holidays go by so quickly but am welcoming spring with open arms!  Okay, I may be jumping the gun here but I feel like the holidays equal winter.  Then there is this in-between timing of not knowing if it’s still winter or if spring is right around the corner.  Either way, I will gladly wear scarfs as long as I can since Las Vegas summer weather is not always the most enjoyable.  Valentine’s day, however, IS around the corner.  This color frosting is perfect for cupcakes to give to that special someone.

I am a sucker for tart flavors.  Raspberry being on the top of that list.  You can easily make these with either raspberry preserves or fresh raspberries.  As you will see from the recipe, I decided to use raspberry preserves.  I also do not add the typical amount of powdered sugar since I do not want it to overtake the raspberry flavoring.  The white chocolate is just that extra touch!

White Chocolate & Raspberry Frosting
This frosting can compliment lots of different flavored cupcakes or cakes! Not too tart but sweet enough to satisfy.

  1. Whip butter in mixer using the paddle attachment for several minutes until butter is smooth and creamed.
  2. Pour powdered sugar into mixing bowl 1 cup at a time.
  3. Add raspberry preserves, vanilla extract, and milk. Continue beating until all ingredients are well combined. Then beat at a high speed for 2 minutes to whip some additional air into the frosting. Set aside
  4. **This is an additional step. Melt white chocolate morsels in microwavable bowl. Add a small layer to the top of each cupcake. Let cool.
  5. Once white chocolate is hardened, pipe raspberry frosting with any tip. Any left over white chocolate can be drizzled on top for decoration.

  1. Chelsea, these cupcakes look absolutely fabulous. You are so talented. If I was eating sugar I would make them, now we just look at pictures of wonderful pastry, and pray that will fulfill our craving !
